In a pan, Add 1 Tbsp Oil.
Add all the wet ingredients like : Garlic, Shallots, Lemongrass, Galangal, Coriander roots. Sauce them till its golden brown and set aside.
In a pan, Add in all the dry ingredients like Cinnamon, Cumin seeds, Fennel seeds, Coriander seeds, Cardamom seeds, Dried Big spur chillies, Dried Thai red chillies, Black peppercorns and cloves.
Roast them all on medium heat until its fragrant and set them aside.
Blend the Dry Ingredients and Wet ingredients along with Nutmeg powder and Shrimp paste along with water.
