Moroccan Zaalouk

 4 tbsp Olive Oil
 6 Garlic Cloves, Minced
 2 Medium Tomatoes, Chopped
 2 tsp Cumin Powder
 2 tsp Paprika
 2 tsp Cayenne Pepper Powder
 1.5 Medium Eggplants
 ½ cup Water
 Salt, To taste
