Kerala egg curry is one of my favorite egg curries. Coconut oil and coconut milk are the two main ingredients of this curry.A light, yellow-colored based spiced egg curry that is flavored with coconut milk and garam masala.<\/h2>\n

Ingredients<\/h3>\n

2<\/span> tbsp<\/span> Coconut Oil<\/span><\/div>\n
¾<\/span> tsp<\/span> Mustard Seeds<\/span><\/div>\n
3<\/span> <\/span> Kashmiri Red Chilies, Broken<\/span><\/div>\n
2<\/span> <\/span> Curry Leaves, Springs<\/span><\/div>\n
1<\/span> <\/span> Large Onion, sliced<\/span><\/div>\n
3<\/span> <\/span> Green Chilies, Slit<\/span><\/div>\n
1<\/span> <\/span> inch Ginger , Finely Chopped<\/span><\/div>\n
4<\/span> <\/span> Garlic Cloves, Finely Chopped<\/span><\/div>\n
1<\/span> tsp<\/span> Coriander Powder<\/span><\/div>\n
½<\/span> tsp<\/span> Turmeric Powder<\/span><\/div>\n
2<\/span> <\/span> Tomatoes, sliced<\/span><\/div>\n
Salt, As per taste<\/span><\/div>\n
1.50<\/span> cups<\/span> Coconut Milk<\/span><\/div>\n
½<\/span> tsp<\/span> Garam Masala Powder<\/span><\/div>\n
½<\/span> tsp<\/span> Black Pepper Powder<\/span><\/div>\n
4<\/span> <\/span> Boiled Eggs, Cut into Half<\/span><\/div>\n<\/div>\n

Directions<\/h3>\n

In a pan, add in the coconut oil and allow it to heat.<\/p>\n<\/div>\n<\/div>\n

\n

To the oil, Add in the Mustard seeds, Kashmiri Red Chilies, Curry Leaves. Saut\u00e9 them together for a minute<\/p>\n<\/div>\n<\/div>\n

Add the sliced Onions and Green Chilies to this mixture. Cook the onions till it turns golden brown.<\/p>\n<\/div>\n<\/div>\n

\n

Once the onions turn golden brown, add in the finely chopped Ginger and Garlic. Saut\u00e9 them together for a minute.<\/p>\n<\/div>\n<\/div>\n

Add in the Coriander powder and Turmeric Powder. Saut\u00e9 them for a minute.<\/p>\n<\/div>\n<\/div>\n

\n

Now, let’s add in the Slices Tomatoes and cook it till it turns Mushy.<\/p>\n<\/div>\n<\/div>\n

\n

Add in some salt and coconut milk. Mix them well.<\/p>\n<\/div>\n<\/div>\n

\n

Cover and cook the curry for 2 to 3 mins over low heat.<\/p>\n<\/div>\n<\/div>\n

\n

Add in Garam Masala and Black Pepper Powder. Mix them well.<\/p>\n<\/div>\n<\/div>\n

\n

Top the curry with 4 half cut boiled Eggs.<\/p>\n<\/div>\n<\/div>\n
