Tom Kha Gai is one of the easiest, quickest, yet most flavorful soups you will ever taste. It is light yet creamy, sweet yet tart, salty and citrusy, and bursting with layer upon layer of fantastic flavor.<\/h2>\n

2<\/span> cups<\/span> Coconut Milk<\/span><\/div>\n
1.50<\/span> cups<\/span> Water<\/span><\/div>\n
4<\/span> <\/span> Kaffir Lime Leaves<\/a>, Stems Removed<\/span><\/div>\n
2<\/span> <\/span> inch Galangal, Sliced<\/span><\/div>\n
1<\/span> <\/span> Lemongrass, Cut into pieces<\/span><\/div>\n
2<\/span> <\/span> Chicken Thigh Fillets, Cut into small bite size<\/span><\/div>\n
1<\/span> cup<\/span> Oyster Mushrooms, Cut into small pieces<\/span><\/div>\n
1<\/span> tbsp<\/span> Fish Sauce<\/span><\/div>\n
1<\/span> tsp<\/span> Palm Sugar<\/span><\/div>\n
5<\/span> <\/span> Red Thai Chillies, Slit<\/span><\/div>\n
Salt, To Taste<\/span><\/div>\n
1<\/span> cup<\/span> Coriander Leaves<\/span><\/div>\n
2<\/span> tbsp<\/span> Lemon Juice<\/span><\/div>\n<\/div>\n

In a saucepan, pour in coconut milk and water.<\/p>\n<\/div>\n<\/div>\n

Stir in Kaffir Lime leaves, Galangal, and Lemongrass to the coconut milk mixture, using low heat and stirring in one direction.<\/p>\n<\/div>\n<\/div>\n

Place chicken in the saucepan and cook over low flame.<\/p>\n<\/div>\n<\/div>\n

Mix in Fish sauce, Palm sugar, and Red Thai Chilies.<\/p>\n<\/div>\n<\/div>\n

Season with salt, add coriander leaves, switch off the flame, and finally squeeze in lemon juice. Give it a final mix.<\/p>\n<\/div>\n<\/div>\n
