Thai pumpkin chicken curry or Gaeng ped gai faktong is an easy and simple Thai red curry that takes just 30mins to prepare.<\/h2>\n

4<\/span> tbsp<\/span> Oil<\/span><\/div>\n
2<\/span> <\/span> Chicken Thigh Fillets<\/span><\/div>\n
1.50<\/span> cups<\/span> Coconut Milk<\/span><\/div>\n
3<\/span> tbsp<\/span> Red Curry Paste<\/span><\/div>\n
1<\/span> cup<\/span> Water<\/span><\/div>\n
300<\/span> g<\/span> Pumpkin<\/span><\/div>\n
1<\/span> tbsp<\/span> Fish Sauce<\/span><\/div>\n
1<\/span> tbsp<\/span> Palm sugar<\/span><\/div>\n
½<\/span> cup<\/span> Thai Basil leaves<\/span><\/div>\n
1<\/span> <\/span> Red Spur Chilies<\/span><\/div>\n<\/div>\n

Directions<\/h3>\n

On a pan add in Oil and Red curry paste and saute it for 2 to 3 mins until fragrant.<\/p>\n<\/div>\n<\/div>\n

To this add the chicken pieces and saute them along with curry paste for 3 mins.<\/p>\n<\/div>\n<\/div>\n

To the pan add coconut milk, water, fish sauce, and Palm sugar. Mix them well and cover it. Allow the curry to cook for 5 mins.<\/p>\n<\/div>\n<\/div>\n

After 5 mins, add the diced Pumpkin pieces into the curry. Cover the curry and allow it to cook until the pumpkin is cooked well.<\/p>\n<\/div>\n<\/div>\n

Thai Pumpkin Chicken Curry is now ready and Garnish it with Thai Basil and Red Spur
