Sri Lankan black chicken curry or Chicken Kalupol curry is one of the most popular Sri Lankan curries. It’s spicy and so flavourful. Basically for this curry, the whole spices and red chili powder are roasted till they turn aromatic. Then the whole spices are then ground to a fine powder. The chicken is marinated with ground powder and roasted red chili powder. Unlike other curries, this chicken curry doesn’t have coconut milk. It is very simple to prepare and doesn’t take much time. It can be served with parathas, roti, chapati, or rice.<\/h2>\n

4<\/span> <\/span> Cloves<\/span><\/div>\n
½<\/span> tsp<\/span> Black pepper powder<\/span><\/div>\n

½<\/span> tsp<\/span> Mustard Seeds<\/span><\/div>\n
1.50<\/span> tsp<\/span> White rice<\/span><\/div>\n
Roasted Red Chilli Powder<\/div>\n

1<\/span> tsp<\/span> Salt<\/span><\/div>\n
1<\/span> <\/span> Onions, large and chopped<\/span><\/div>\n
5<\/span> <\/span> Garlic,crushed<\/span><\/div>\n
2<\/span> <\/span> inch, Ginger, crushed<\/span><\/div>\n
Curry Leaves<\/span><\/div>\n
Pandan leaves<\/span><\/div>\n

Heat a flat pan, add coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, cinnamon, Cardamom pod, cloves, curry leaves, white rice, and black peppercorns. Dry roast all the ingredients on low flame until it turns aromatic and changes color. <\/p>\n<\/div>\n<\/div>\n

Set the dry roasted spices aside and let it cool. Grind all the dry roasted spices into fine powder.<\/p>\n<\/div>\n<\/div>\n

In the same pan, add the red chilli powder and roast it on low flame until it turns to brown colour.<\/p>\n<\/div>\n<\/div>\n

Now in a mixing bowl, add Chicken, Ground roasted powder, roasted red chilli powder, turmeric powder, tamarind puree and salt. Mix them all well and coat the chicken well with the spices.<\/p>\n<\/div>\n<\/div>\n

In a pan, add coconut oil and allow it to heat. Once the oil is hot, add chopped onions and saute it till it turns golden brown.<\/p>\n<\/div>\n<\/div>\n

To the onions, add curry leaves, crushed garlic, and ginger. Saute them for 2 to 3 mins.<\/p>\n<\/div>\n<\/div>\n

Add pandan leaves and saute for a minute.<\/p>\n<\/div>\n<\/div>\n

Now, let’s add marinated chicken and mix it all well. Cook the chicken for 5 mins.<\/p>\n<\/div>\n<\/div>\n

To the chicken add water and mix everything well. Cover and simmer the curry for 15 mins.<\/p>\n<\/div>\n<\/div>\n

Do a taste check and add the required salt.<\/p>\n<\/div>\n<\/div>\n
