Chicken Afritada or Afritadang manok is a popular Filipino chicken stew with tomato-based gravy. It is a simple & straightforward dish that can be cooked on regular days. It is perfect for lunch and is better when served with warm white rice. Afritada was derived from the Spanish word \u201cFritada\u201d which means \u201cfried\u201d. The common vegetables used in this dish are potato, carrot & bell peppers.<\/h2>\n

Ingredients<\/h3>\n

4<\/span> tbsp<\/span> Oil<\/span><\/div>\n
2<\/span> <\/span> Onions, chopped<\/span><\/div>\n
5<\/span> <\/span> Garlic Cloves, chopped<\/span><\/div>\n
500<\/span> g<\/span> Chicken, curry cut<\/span><\/div>\n
1<\/span> <\/span> Tomato Puree, large<\/span><\/div>\n
3<\/span> <\/span> Bay Leaves<\/span><\/div>\n
1<\/span> cup<\/span> Water or Chicken Broth<\/span><\/div>\n
1<\/span> <\/span> Carrot<\/span><\/div>\n
1<\/span> <\/span> Potato<\/span><\/div>\n
⅓<\/span> cup<\/span> Green Peas<\/span><\/div>\n
1<\/span> tsp<\/span> Black pepper powder<\/span><\/div>\n
Salt, as per taste<\/span><\/div>\n<\/div>\n

In a pan, add oil. Once the oil is hot add garlic and saute for 20 secs. <\/p>\n<\/div>\n<\/div>\n

After 20 secs add onions and cook till golden brown.<\/p>\n<\/div>\n<\/div>\n

To this add carrots, diced potatoes. Saute it till it\u2019s slightly tender.<\/p>\n<\/div>\n<\/div>\n

Add the curry cut chicken and fry it till its turn golden brown<\/p>\n<\/div>\n<\/div>\n

To this add tomato puree, bay leaves, and water. Cover and cook it for 15 mins.<\/p>\n<\/div>\n<\/div>\n

Check the curry after 15 mins, add sugar, salt, and pepper. Give them a mix and cover and cook for another 15mins till the curry thickens.<\/p>\n<\/div>\n<\/div>\n

After 15 mins, add peas and cook it for 5 mins.<\/p>\n<\/div>\n<\/div>\n
