Sri Lankan Jackfruit Curry (Polos Curry \/ Polos Ambula) is one of the most popular Sri Lankan curries. For this recipe, they usually use green jackfruit or as you might also call raw jackfruit. It’s spicy and so flavourful. Basically for this curry, the whole spices and red chili powder are roasted till they turn aromatic. Then the whole spices are then ground to a fine powder and the jackfruit is coated with these spices and cooked along with coconut milk. It is very simple to prepare and doesn’t take much time. It can be served with parathas, roti, chapati, or rice.<\/h2>\n

½<\/span> tsp<\/span> Mustard Seeds<\/span><\/div>\n

Making the curry<\/div>\n

1<\/span> <\/span> Onion, Finely Chopped<\/span><\/div>\n
5<\/span> <\/span> Garlic Cloves<\/span><\/div>\n
10<\/span> <\/span> to 15, Curry Leaves<\/span><\/div>\n
2<\/span> <\/span> Pandan Leaves<\/span><\/div>\n
3<\/span> <\/span> Goraka<\/span><\/div>\n
½<\/span> tsp<\/span> Turmeric Powder<\/span><\/div>\n
2<\/span> tbsp<\/span> Roasted Red Chili Powder (Pre-prepared earlier)<\/span><\/div>\n
1<\/span> tbsp<\/span> Roasted Curry Powder (Pre-prepared earlier)<\/span><\/div>\n
500<\/span> g<\/span> Young Jackfruit, Cut into small pieces<\/span><\/div>\n
700<\/span> ml<\/span> Coconut Milk, Lite<\/span><\/div>\n
Salt, To taste<\/span><\/div>\n
½<\/span> tsp<\/span> Roasted Fenugreek Powder (Fenugreek roasted for 20 secs and crushed to powder using mortar & pestle)<\/span><\/div>\n<\/div>\n

Directions<\/h3>\n

Heat a flat pan, add coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, cinnamon, cardamom pods, cloves, curry leaves, white rice, and black peppercorns. Dry roast all the ingredients on low flame until it turns aromatic and changes color.<\/p>\n<\/div>\n<\/div>\n

Set the dry roasted spices aside and let it cool. Grind all the dry roasted spices into fine powder.<\/p>\n<\/div>\n<\/div>\n

In the same pan, add the red chili powder and roast it on low flame until it turns to brown color.<\/p>\n<\/div>\n<\/div>\n

In a Kadai, add coconut oil and allow it to heat. Once the oil is hot, add mustard seeds, cumin seeds, and fenugreek seeds. Saute it for 10 secs.<\/p>\n<\/div>\n<\/div>\n

Now add chopped garlic, and saute it for 10 secs. To this add chopped onions and cook till it’s light golden brown.<\/p>\n<\/div>\n<\/div>\n

Now add curry leaves, pandan leaves, and gorka. Saute them for 10 secs.<\/p>\n<\/div>\n<\/div>\n

Now add turmeric powder, roasted curry powder, and roasted chilli powder. Saute them for 30 secs.<\/p>\n<\/div>\n<\/div>\n

Now add young jackfruit. Mix them well and coat the jackfruit with the spices<\/p>\n<\/div>\n<\/div>\n

To this now add coconut milk and Salt. Mix them well. Cover and cook the curry until the jackfruit is cooked well. Keep checking in between if the jackfruit is cooked by doing a fork test. It took us almost 20 mins to cook the jackfruit.<\/p>\n<\/div>\n<\/div>\n

Once the jackfruit is cooked, do a quick taste check and adjust the salt accordingly.<\/p>\n<\/div>\n<\/div>\n
