Kerala vegetable stew with vegetables and spices simmered in Thick coconut based gravy. Its so simple and easy to prepare. Its perfect when served with Appams or Idiyappams on the side!<\/h2>\n

Ingredients<\/h3>\n

4<\/span> tbsp<\/span> Coconut Oil<\/span><\/div>\n
1<\/span> <\/span> inch, Cinnamon<\/span><\/div>\n
3<\/span> <\/span> Cardamom pods<\/span><\/div>\n
3<\/span> <\/span> Cloves<\/span><\/div>\n
2<\/span> <\/span> Onion, medium and sliced<\/span><\/div>\n
5<\/span> <\/span> Garlic Cloves, crushed<\/span><\/div>\n
2<\/span> <\/span> inches, Ginger, crushed<\/span><\/div>\n
4<\/span> <\/span> Green chilies, sliced<\/span><\/div>\n
10<\/span> <\/span> – 15, Curry leaves<\/span><\/div>\n
1<\/span> <\/span> Potato, Large and diced<\/span><\/div>\n
2<\/span> <\/span> Carrot, medium and diced<\/span><\/div>\n
15<\/span> <\/span> Green beans, chopped<\/span><\/div>\n
⅓<\/span> cup<\/span> Green Peas<\/span><\/div>\n
500<\/span> ml<\/span> Thick Coconut Milk<\/span><\/div>\n
Salt, as per taste<\/span><\/div>\n<\/div>\n

In a pan, add coconut oil and allow it to heat.<\/p>\n<\/div>\n<\/div>\n

\n

Add Cinnamon stick, Cardamon pods and Cloves. Saut\u00e9 it for 10 secs.<\/p>\n<\/div>\n<\/div>\n

\n

Now add sliced Onions and cook till its light golden brown. <\/p>\n<\/div>\n<\/div>\n

\n

Once the Onions turn golden brown, add in crushed Garlic and Ginger. Saut\u00e9 them for 20 secs.<\/p>\n<\/div>\n<\/div>\n

Add Green chilies and curry leaves. Cook them for 15 secs.<\/p>\n<\/div>\n<\/div>\n

Add in Diced Potatoes, Carrots, Beans and Green Peas. Mix them well and cook it for 10 mins.<\/p>\n<\/div>\n<\/div>\n

Add thick coconut milk (first squeezed) and salt. Mix them well.<\/p>\n<\/div>\n<\/div>\n

Cover and cook the stew for 15 mins. <\/p>\n<\/div>\n<\/div>\n

After 15 mins check if the vegetables are cooked well. Also do a taste check and adjust the salt.<\/p>\n<\/div>\n<\/div>\n

Kerala Vegetable Stew is ready to be served.
