Aloo Bhaji a smashed potato dry curry that has flavors of Turmeric, Curry leaves, Asafoetida, and much more. Aloo Bhaji is one of the most commonly served dry curry at any South Indian Restaurant. <\/h2>\n

Ingredients<\/h3>\n

5<\/span> tbsp<\/span> Oil (As per requirement)<\/span><\/div>\n
1<\/span> tsp<\/span> Mustard<\/span><\/div>\n
1<\/span> tsp<\/span> Cumin Seeds<\/span><\/div>\n
1<\/span> tsp<\/span> Urad daal (Skin split black gram) <\/span><\/div>\n
1<\/span> <\/span> Onion <\/span><\/div>\n
1<\/span> <\/span> Finely Chopped Ginger <\/span><\/div>\n
3<\/span> <\/span> Finely Chopped Garlic <\/span><\/div>\n
3<\/span> <\/span> Slit Green Chillies <\/span><\/div>\n
1<\/span> tbsp<\/span> Curry leaves <\/span><\/div>\n
½<\/span> tsp<\/span> Turmeric powder <\/span><\/div>\n
¼<\/span> tsp<\/span> Asafoetida \/Hing<\/span><\/div>\n
3<\/span> <\/span> Potatoes, Peeled and cooked<\/span><\/div>\n
1<\/span> cup<\/span> Water<\/span><\/div>\n
1<\/span> tsp<\/span> Salt (As per requirement)<\/span><\/div>\n
2<\/span> tbsp<\/span> Coriander leaves <\/span><\/div>\n<\/div>\n

Drizzle oil into the heated Pan.<\/p>\n<\/div>\n<\/div>\n

\n

Once the oil is heated drizzle mustard seeds onto the pan and let it splutter.<\/p>\n<\/div>\n<\/div>\n

Mix mustard with Cumin and Urad daal into the oil.<\/p>\n<\/div>\n<\/div>\n

\n

Add Onions and saute it till its light brown and golden<\/p>\n<\/div>\n<\/div>\n

Once the onions are lightly brown and golden, saute them with Ginger, Garlic, Chillies and Curry leave for 2-3mins.<\/p>\n<\/div>\n<\/div>\n

Add Turmeric powder and Asafoetida into the mixture and mix it well.<\/p>\n<\/div>\n<\/div>\n

Drop in the cooked and Diced potatoes into the mixture.
