Add green chillies and cook for 2 more minutes, then add coriander leaves, curry leaves, and mint leaves. Cook for 2 minutes on medium heat.
Set aside and let it cool, then grind everything into a coarse paste.
In a mixing bowl, add small pieces of chicken thigh fillets. Pour the coarse paste, salt, and lemon juice over the chicken and coat well. Marinate for 2 hours.
Skewer the chicken.
Bake the chicken in a preheated oven at 180 degrees for 30 minutes.
