Beetroot Salad

Raita is an Indian condiment made from yogurt, mixed together with a variety of vegetables and herbs, and typically served as a side dish. In this recipe, we are going to blend in beetroot, onions, and yogurt. It not only has a vibrant color but it's one of my favorite Raitas. This recipe comes together for about less than 30 mins made from very few ingredients. Let's learn how to prepare beetroot raita in less than 30 mins. Beetroot Raita or Beetroot Salad is a simple and Healthy Vegetarian Indian Condiment. It's usually served as a side dish to any of the main courses. It just takes very few ingredients to make this recipe. The brilliant pink hue of the salad makes this dish quite photogenic in its own way. This dish doesn't have any spices, It just takes a few chilies, Onions, Yogurt, and Beetroot to make this creamy and delicious raita. Lastly, it's Garnished with some Coriander to make it more colorful.

 1 Beetroot, boiled
 3 Green Chillies, Slit
 1 Onion, Chopped
 2 tbsp Coriander leaves, chopped
 6 tbsp Curd
 4 tbsp Boiled Beetroot water
 Salt, As per requirement

Boil the peeled beetroot until a fork can get past through it. Keep the cooked beetroot water aside.

Chop the beetroot into small pieces and place into a mixing bowl.

Add chopped onions, chilies, and salt into the bowl and mix it well along with the beetroot.

Mix the salad veggies along with curd, boiled beetroot water, and chopped coriander leaves.
