Egg Malai Masala

A basic egg curry that is extremely creamy and delicious. The curry is mildly spicy because of garam masala and black pepper powder used. The richness and creaminess of the curry come from the milk. The making of the curry is very simple and usually uses very common ingredients.

 5 tbsp Oil
 5 Eggs, boiled and cut into half
 2 Onions, Medium
 4 -5 , Green chilies
 1 tbsp Ginger garlic paste
 1 tsp Garam masala
 1.50 tsp Cumin powder
 ¾ tsp Black pepper powder
 300 ml Milk
 Coriander leaves, chopped

Grind the onion and chillies fine paste.

In a Kadai, add oil and allow it to heat. Once the oil is hot, add the ground onion and chilli puree. Saute the puree for 10 to 15 mins till it changes color and reduces its quantity. You may see it release oil in the edges.

Now add ginger garlic paste and cook it for 2 mins.

After 2 mins, add cumin powder, garam masala, and black pepper powder. Mix them all well and cook till the raw smell goes away. Switch off the flame after cooking the spices.

Now add milk and give it a good mix. Now switch on the flame and add salt to the gravy. Cook the curry till the oil separates.

Add the boiled egg halves and dip the eggs into the curry. Cover and cook the curry for 3 mins.

Give it a final mix and Garnish it with chopped coriander leaves.

Egg Malai Masala is now ready. Serve it with rice or bread of your choice.
