Kerala Egg Roast

Kerala egg roast is also known as Nadan Mutta Roast, a popular dish from the Indian state of Kerala. In this recipe, we are going to start off by making a thick masala made by caramelizing the onions, ginger, garlic, curry leaves, and tomatoes. All these ingredients are cooked with coconut oil which gives this dish a typical south Indian flavor. Once all of this comes together and forms a thick paste, we then add in all the spice powders thereby enhancing the flavors of the masala. The last step to this is by adding in the hard-boiled eggs, tossing them along with that masala for a while until the eggs hold on to that rich thick masala. The curry leaves and coconut oil are the most integral part of this recipe. Usually, this dish is served with Appams, Dosas, Puttu, Rice, or any Bread of your choice.

 3 tbsp Coconut Oil
 2 medium Onion, Sliced
 3 Garlic, Finely Chopped
 1 inch Ginger, Finely Chopped
 10 Curry Leaves
 1 tsp Fennel Seeds Powder
 1 tsp Black Pepper Powder
 1 tsp Kashmiri Chili Powder
 1 tsp Red Chilli Powder
 1 tsp Coriander Powder
 ½ tsp Garam Masala
 ¼ tsp Turmeric Powder
 1 medium Tomato, Chopped
 ¼ cup Water
 4 Eggs
 Salt as per taste

Heat oil and. Then add onion, curry leaves, and salt. Saute till golden brown.

Add ginger, garlic, fennel powder, and pepper, and saute.

Then add powders and saute well.

Add tomato and cook well. Then add water and cook.

Finally, add boiled egg and roast well.
