Massaman Curry Paste

Massaman Curry is one of the most famous and popular Thai curries. The curry has the combined essence of Sweet, Spicy, and Sour flavors. Making this curry mainly depends on the curry paste which is an integral part of this curry. The paste is made up of blending in dry spices like Cinnamon, Cloves, Nutmeg, Fennel seeds, Cumin, Dried chilies, Cardamom along with wet ingredients like Shallots, Lemongrass, Garlic, Galangal, and Coriander roots. Firstly the curry paste is made by dry roasting all the dry spices together. Later Roasting the wet ingredients till golden brown. All of the roasted ingredients are then combined into a paste. This recipe is made by blending in Shrimp paste. If you are a vegetarian, you can totally skip this ingredient in your recipe.

Roasting Wet Ingredients
 1 tbsp Oil
 10 Garlic cloves
 4 Shallots
 4 Coriander Roots
 2 inch Galangal
 2 Lemongrass stalk
Roasting Dry Ingredients
 2 tsp Cumin seeds
 4 Dried Big Spur chillies
 4 Dried Thai red chillies
 2 tsp Coriander Seeds
 1 tsp Black Peppercorns
 ½ tsp Cardamom Seeds
 2 tsp Fennel seeds
 1 inch Cinnamon
 5 Cloves
Other Ingredients
 ¼ tsp Shrimp paste
 ¼ tsp Nutmeg powder
 ¾ cup Water (Only when using a blender)

Process to Roast Wet ingredients

In a pan, Add 1 Tbsp Oil.

Add all the wet ingredients like : Garlic, Shallots, Lemongrass, Galangal, Coriander roots. Sauce them till its golden brown and set aside.

Process to Roast Dry ingredients

In a pan, Add in all the dry ingredients like Cinnamon, Cumin seeds, Fennel seeds, Coriander seeds, Cardamom seeds, Dried Big spur chillies, Dried Thai red chillies, Black peppercorns and cloves.

Roast them all on medium heat until its fragrant and set them aside.

Blend the Dry Ingredients and Wet ingredients along with Nutmeg powder and Shrimp paste along with water.

Note: If you are using Mortar and pestle, It not necessary to add water when combining.
