Take a bowl and knead the all-purpose flour (maida) along with oil, salt, and water till its very soft and smooth. Let the dough sit for 20-30 mins
Cup the dough in both your palm and roll it till it's flattened and thin.
Stuff on half-side of the flattened dough with chopped spinach, sliced mushrooms, and Mozzarella cheese. Spread around 2-3 pinch of salt for taste.
Close the stuffing with the help of other side of the dough(which is not stuffed) and pinch the edges till it's completely closed.
Drizzle oil on the pan and transfer it to the pan and fry it till it's well done. After the Gozleme is done, cut it into square-shaped pieces and serve it with a lemon wedge
