Chinese Style Garlic Green Beans

 3 cups Fresh Green Beans, Trimmed
 4 Garlic Cloves, Minced
 2 cups -3 Oil, For Frying
 Salt, To Taste
 1 tsp Soy Sauce (optional)

Rinse and trim the green beans, then set them aside.

Heat a large saucepan or wok over medium heat and add the oil.

When the oil is hot, add the green beans to the pan and flash-fry for 1-2 minutes, until the skin starts to wrinkle.

Remove the green beans from the oil and drain on a paper towel-lined plate.

In a separate pan, heat 2 tablespoons of oil over medium heat.

Add minced garlic to the pan and stir-fry for 30 seconds until fragrant.

Add the flash-fried green beans to the pan and stir-fry for another minute.

Season with salt and stir-fry for another minute.

If desired, add a teaspoon of soy sauce and stir-fry for 30 seconds more.

Remove the green beans from heat and serve hot as a side dish.
