The traditional Japanese cuisine (also known as “washoku”) is based on rice with soup, side dishes. The side dishes often consist of fish, pickled vegetables, vegetables cooked in broth, etc. Seafood is common in Japan, it’s often grilled, but also served raw as sashimi or sushi. Seafood and vegetables are also deep-fried in a light batter, as tempura. Apart from rice, other staple includes noodles, such as “soba”, “ramen” and “udon”. Yakisoba (焼きそば) is a classic Japanese stir fry noodles dish with chicken/pork or any meat of your choice and vegetables, and it’s seasoned with a sweet, sour, and tangy flavored sauce. For this recipe usually, wheat-based noodles are used. In Japan, these noodles are stir-fried on an iron plate/ Teppan (鉄板). Okonomiyaki is “Japanese savory pancakes” or “Japanese pizza” made from chopped cabbage and other ingredients you like it to be grilled with., The word “Okonomi” means “what you like” or “what you want”, and “Yaki” means “grilled” or “cooked”. In this recipe, we will show you how to make Osaka-style Okonomiyaki. These pancakes are topped generously with some Katsuobushi ( Dancing Bonito flakes), Aonori (Dry Seaweed powder), Japanese kewpie mayonnaise, and Okonomiyaki sauce.
